Crockpot GFDF Chicken Pot Pie

Our boys are gluten and dairy intolerant. Therefore, they are on a gluten and dairy free diet. Occasionally I will post a recipe I attempt. I actually threw this one together on my own 😉



-4 large chicken breasts

-Veggies fresh or frozen

-Lawry’s garlic salt 

-Minced garlic

-Corn starch

-Extra virgin olive oil

-Gluten free frozen pie crust. The brand I used is called Wholly Wholesome. (if your not eating GFDF any frozen pie crust will do)


Start by seasoning 4 large chicken breasts with Lawry’s garlic salt. (It’s the BEST garlic salt EVER, nothing else compares in my opinion) Then cut up your chicken and place it into your crockpot but before you do that add a little extra virgin olive oil to the bottom so your chicken doesn’t stick) Then comes the veggies!! Fresh or frozen it doesn’t matter, I personally prefer fresh 😉 once you get your veggies chopped up place them in the crockpot add a little more garlic salt, a dash of minced garlic and add just enough water to cover. Let all this simmer on high or low whichever you prefer depending on when you start cooking. Once everything has cooked I add some Argo corn starch to thicken my filling.

Then comes the easy part!! Add your filling to your dish and cover with a freezer pie crust. Since my husband and I don’t eat the gluten and dairy free diet I made two separate dishes and had plenty of filling to do so. 

Then just bake the dish according to your pie crusts instructions. I found the boys gluten/dairy free crust at our local Kroger.

It was a huge hit in our house and was easy peasy!! Hope you all enjoy it as much as we did
